Pronouced "Dall-Yoo-An", the name was chosen by farmer and founder William Mackenzie in 1852 and means "The Green Vale" in Gaelic. The site was a working farm up until 1950 and was originally chosen for its proximity to its water source, the Balliemullich Burn. Most of the whisky produced here is used in blends, leaving only around 2% bottled as single malt each year. In 1884 the distillery began modernising, and becomes the largest in Speyside by 1889. This is also when the distillery installed for the first ever Doig Ventilators. Invented by Charles Doig, and sometimes referred to as Pagoda Roofs, they were designed to ventilate smoke from kiln rooms whilst drawing in oxygen for a better burn. These icons of architecture can be found all over Scotland today but unfortunately the originals at Dailuaine burned down in 1917. It took 126 years for Dailuaine to officially release their first single malt. In 1991 they launched the 16 year old Flora and Fauna bottling, which just happens to be this months dram! It was and is today a key component used by blenders like Johnnie Walker, which means outside of a few independent bottlings, it was very difficult to taste as a single malt. Dailuaine won't always taste this way. Fermentation times were altered at the distillery in 2015 to achieve a more waxy character. This was because sister distillery Clynelish had closed for refurbishment, and the owners Diageo wanted to keep stock levels up for their blenders. Starting in 1991, UDV (now Diageo) started releasing single malt whisky from it distilleries that normally only produced whisky for use in blends. The initial range, released between 1991 & 1994 consisted of 22 distilleries; Aberfeldy, Aultmore, Balmenach, Benrinnes, Bladnoch, Blair Athol, Royal Brackla, Caol Ila, Clynelish, Craigellachie, Dailuaine, Dufftown, Glendullan, Glenlossie, Inchgower, Linkwood, Mannochmore, Mortlach, Pittyvaich, Rosebank, Teaninich & Speyburn.
