Built on the same site as the Girvan Grain Distillery in 2007, whisky from the site was originally destined solely for blends. However, the owners eventually relented to demand, releasing single malt 1.1 in 2015. Release 1.2, Sweet Smoke, followed in 2018. This new bottling has slightly boosted the smoke and sweetness, with the aim of creating a more mellow and complex dram. Ailsa Bay begin maturation with a process they call “Micro Maturation”. New make spirit is first filled into small casks (25-100L) that previously held “Hudson Baby Bourbon” (a 100% corn whiskey from New York State) for 6 to 9 months, before being moved into more traditional casks (virgin, first-fill and refill American Oak). This process accelerates the initial maturation and produces more sweet flavours in the finished whisky. Rather uniquely, the site has been used for multiple distilleries. In 1966, Girvan added two pot stills, creating the Ladyburn distillery, which produced Single Malt whisky from 1966 until it was mothballed in 1975 and later dismantled. This time round, we can taste fresh heather, sticky barbecue sauce and a nostalgic hint of orange lollipops.
